Yeah. I do think we should hold formal sessions, but honestly I'm not sure how to organize them. Saturday evening seems like the most realistic time slot, but it would be hard to accomplish without carving into someone's curfew. Friday evening might work as well. If people know a week in advance that we're holding a game session from 4:30-5:30 PM PST on Friday, they will be able to plan for it?
Or whatever time most of us can agree to on a Saturday? It would be a good place to start.

Sound off. If we have at least 4 players at 12:00, we can start. If we don't I'll sound off again at 12:45 and try to start at 1:00. If we still lack a sufficient number of people, I will cease my attempts for the day.
